Sodium Phosphate (Na 2 PO 4 ) is one of the most widely used ingredients in food industry. It is commonly found in processed foods such as soups, dressings, sauces, and other products. Leavening Agent: Sodium phosphate is used as a raising agent in breads and cakes when a baker wants to create a lighter texture. The most common type of phosphate used for this purpose is called sodium aluminum phosphates.

These compounds speed up the reactions that produce carbon dioxide, causing dough to rise.

Freezing Point Lowering Agent: Sodium phosphate can be used as a freezing point lowering agent in some foods. This is done to prevent ice crystals from forming when food is being frozen.

Ice crystals can form even at relatively low temperatures if these additives are not present. As the name indicates, this prevents the freezing point of the food from getting low enough to freeze.

Preservative: Sodium phosphate is used as a preservative in many foods that require long-term storage. It prevents food from becoming moldy or otherwise unusable after long periods of time.
